Pão de Queijo (Cheese Bread)

These are small, baked cheese rolls, a popular snack and breakfast item in Brazil. They are naturally gluten-free due to the use of tapioca flour. Makes about 15 rolls.

Ingredients

  • 1 cup Tapioca flour
  • 0.5 cup Milk
  • 0.25 cup Vegetable oil
  • 1 large Eggs
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Shredded Parmesan cheese
  • 0.5 teaspoon Salt

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a saucepan, combine milk, vegetable oil, and salt. Bring to a boil over medium heat.
  3. 3Remove from heat and immediately stir in the tapioca flour until well combined.
  4. 4Let the mixture cool slightly for about 5 minutes.
  5. 5Add the egg and mix well until fully incorporated.
  6. 6Stir in the mozzarella and Parmesan cheeses until evenly distributed.
  7. 7Grease a baking sheet or line with parchment paper.
  8. 8Using a spoon or a small cookie scoop, drop rounded portions of the dough onto the prepared baking sheet, leaving some space between each.
  9. 9Bake for 20-25 minutes, or until the rolls are golden brown and puffed up.
  10. 10Let cool slightly before serving.
