Pão de Queijo (Cheese Bread)

Ingredients

  • 2 cups Tapioca Flour (Sour or Sweet)
  • 1/2 cup Milk
  • 1/4 cup Vegetable Oil
  • 2 large Eggs
  • 1 cup Minas Cheese (or Parmesan)
  • 1 tsp Salt

Instructions

  1. 1Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. 2In a small saucepan, combine the 1/2 cup of Milk and the 1/4 cup of Vegetable Oil. Heat this mixture over medium heat until it just begins to simmer, with small bubbles forming around the edges.
  3. 3In a large mixing bowl, combine the 2 cups of Tapioca Flour and the 1 tsp of Salt.
  4. 4Carefully pour the hot milk and oil mixture over the tapioca flour and salt in the large bowl. Stir vigorously with a spoon until the mixture is well combined and looks lumpy.
  5. 5Allow the mixture to cool for 5-10 minutes, until it is warm to the touch but not hot, to prevent cooking the eggs. Add the 2 large Eggs one at a time, mixing thoroughly with a spoon or your hands after each addition until fully incorporated.
  6. 6Stir in the 1 cup of Minas Cheese (or Parmesan) until it is evenly distributed throughout the dough.
  7. 7Scoop rounded tablespoons of the dough and drop them onto the prepared baking sheet, leaving about 1 inch of space between each. Bake for 20-25 minutes in the preheated oven, or until the pão de queijo are puffed up and golden brown on the outside.
