Pão de Queijo (Brazilian Cheese Bread - Adapted)

Ingredients

  • 2 cups Tapioca flour
  • 1 cup Serra da Estrela cheese, grated
  • 1/2 cup Milk
  • 1/4 cup Vegetable oil
  • 1 Egg
  • 1/2 tsp Salt

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a medium saucepan, combine the 1/2 cup of milk and 1/4 cup of vegetable oil. Heat this mixture over medium heat until it just begins to simmer, with small bubbles forming around the edges.
  3. 3In a large mixing bowl, combine the 2 cups of tapioca flour and the 1/2 teaspoon of salt.
  4. 4Carefully pour the hot milk and oil mixture from the saucepan over the tapioca flour and salt in the large bowl. Stir vigorously with a spoon until the mixture is well combined and forms a sticky, shaggy dough.
  5. 5Add the 1 cup of grated Serra da Estrela cheese and the 1 egg to the bowl. Mix thoroughly with your hands or a sturdy spoon until a smooth, uniform dough forms.
  6. 6Line a large baking sheet with parchment paper. Take small portions of the dough and roll them into balls, about 1 to 1.5 inches (2.5 to 4 cm) in diameter. Place the dough balls onto the prepared baking sheet, leaving some space between each one.
  7. 7Bake the pão de queijo in the preheated oven for 20 to 25 minutes, or until they are puffed up and golden brown on the outside.
  8. 8Serve the pão de queijo warm.
