  • 3 large Ripe Plantains
  • 1/4 cup Vegetable Oil

Instructions

  1. 1Peel the 3 large ripe plantains. The skin should come off easily if they are ripe.
  2. 2Cut the peeled plantains into slices. You can cut them lengthwise into planks about 1/2-inch thick, or into rounds about 1/2-inch thick.
  3. 3Pour the 1/4 cup of vegetable oil into a 10-inch skillet and place it over medium heat. Heat the oil until it shimmers, which should take about 2-3 minutes.
  4. 4Carefully place the plantain slices into the hot oil in a single layer. Do not overcrowd the skillet; you may need to cook them in batches. Fry the plantains for about 5-7 minutes per side, until they are golden brown and caramelized. You will see the edges start to darken and the plantains will become slightly soft.
  5. 5Use a slotted spoon or spatula to remove the fried plantains from the skillet. Place them on a plate lined with paper towels to absorb any excess oil.
  6. 6Serve the Platanos Maduros warm.
