Ingredients

  • 4 large Ripe plantains (very ripe, almost black)
  • 2 tablespoons Coconut oil
  • 0.25 teaspoon Salt
  • 4 oz Queso Blanco or Feta

Instructions

  1. 1Peel the plantains and cut them into thick slices (about 1-inch thick).
  2. 2Heat coconut oil in a large skillet over medium heat.
  3. 3Carefully place the plantain slices in the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side, until golden brown and caramelized.
  4. 4Remove the plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. 5Sprinkle with a pinch of salt.
  6. 6Serve immediately with crumbled Queso Blanco or Feta.
