Ingredients

  • 4 medium Ripe Plantains
  • 2 cans Coconut Milk
  • 2 cups Water
  • 1/4 cup Brown Sugar
  • 1 stick Cinnamon Stick
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla Extract
  • 1 can Coconut Cream
  • 1/4 tsp Ground Cinnamon
  • 1/8 tsp Ground Nutmeg

Instructions

  1. 1Peel and chop the ripe plantains.
  2. 2In a large pot, combine the plantains, coconut milk, water, brown sugar, cinnamon stick, and nutmeg.
  3. 3Bring to a boil, then reduce heat and simmer until the plantains are soft and the porridge has thickened, about 25-30 minutes.
  4. 4Remove the cinnamon stick and stir in vanilla extract.
  5. 5For the spiced coconut cream, whisk together coconut cream, ground cinnamon, and ground nutmeg.
  6. 6Serve the plantain porridge hot with a dollop of spiced coconut cream on top.
