  • 2 large Green Plantains
  • 1/2 cup Peanuts
  • 1/4 teaspoon Cayenne Pepper
  • 1/2 teaspoon Salt
  • 2 tablespoons Coconut Oil

Instructions

  1. 1Peel the 2 large green plantains. Slice them very thinly, about 1/16-inch thick, into chip shapes.
  2. 2Place the 1/2 cup peanuts into a food processor and process until they form a fine powder.
  3. 3In a small bowl, combine the ground peanuts with the 1/4 teaspoon cayenne pepper and 1/2 teaspoon salt. Mix well to create the peanut dust.
  4. 4Pour the 2 tablespoons of coconut oil into a large skillet and heat it over medium heat until it reaches 325°F (163°C).
  5. 5Carefully add the plantain chips to the hot oil in a single layer, working in batches so you do not overcrowd the skillet. Fry for 3-5 minutes per side, or until the chips are golden brown and feel crisp to the touch.
  6. 6Using a slotted spoon or tongs, remove the fried plantain chips from the skillet and place them on a plate lined with paper towels to absorb any extra oil. Let them cool for 1-2 minutes.
  7. 7While the chips are still warm, sprinkle the prepared peanut dust evenly over them. Toss gently to coat.
  8. 8Serve the plantain chips with peanut dust immediately for the best crispy texture.
