Plantain Chips with Mojo (Gluten-Free)

Ingredients

  • 2 Green plantains
  • 2 cups Vegetable oil
  • 4 cloves Garlic
  • 1/4 cup Olive oil
  • 2 tablespoons Lime juice
  • 1/2 teaspoon Salt

Instructions

  1. 1Peel the green plantains and slice them thinly using a mandoline or knife.
  2. 2Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  3. 3Fry the plantain slices in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  4. 4In a small bowl, mince garlic and combine with olive oil, lime juice, and salt to make the mojo sauce.
  5. 5Serve the plantain chips with the mojo sauce for dipping.
