Plantain Chips (Spiced)

Ingredients

  • 3 whole Green Plantains
  • 2 cups Vegetable Oil (for frying)
  • 1/2 tsp Salt
  • 1/4 tsp Paprika
  • 1/4 tsp Garlic Powder

Instructions

  1. 1Peel the 3 whole green plantains. Slice them very thinly, about 1/16th of an inch thick, using a mandoline or a sharp knife.
  2. 2Pour the 2 cups of vegetable oil into a large, heavy-bottomed pot. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  3. 3Carefully add a single layer of the sliced plantains to the hot oil, making sure not to overcrowd the pot. Fry for 3-5 minutes, or until the slices are golden brown and crispy. Use a slotted spoon to remove the chips and place them on a plate lined with paper towels to drain.
  4. 4Repeat step 3 with the remaining plantain slices, frying them in batches until all are cooked and drained.
  5. 5In a small bowl, combine the 1/2 tsp salt, 1/4 tsp paprika, and 1/4 tsp garlic powder. Sprinkle this spice mixture evenly over the warm plantain chips while they are still on the paper towels.
  6. 6Allow the spiced plantain chips to cool completely on the paper towels before serving. This ensures they become fully crispy.
