Ingredients

  • 4 pieces Ripe Bananas
  • 1/2 cup Rice Flour
  • 1/4 cup Tapioca Flour
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 1/2 cup Water
  • 1/2 tsp Vanilla Extract
  • 2 cups Cooking Oil

Instructions

  1. 1Peel the 4 pieces of ripe bananas and cut each one in half or into slices, depending on your preference.
  2. 2In a bowl, whisk together the 1/2 cup rice flour, 1/4 cup tapioca flour, 2 tbsp sugar, and 1/4 tsp salt until combined.
  3. 3Pour in the 1/2 cup water and 1/2 tsp vanilla extract, and whisk until you have a smooth batter with no lumps.
  4. 4Pour the 2 cups of cooking oil into a large, heavy-bottomed pot or Dutch oven and heat it over medium heat until it reaches 350°F (175°C).
  5. 5Dip each banana piece into the batter, making sure it is fully coated, then carefully place it into the hot oil.
  6. 6Fry the battered bananas in the hot oil for 3-5 minutes, or until they are golden brown and crispy on all sides. Do not overcrowd the pot; fry in batches if necessary.
  7. 7Using a slotted spoon or spider strainer, remove the fried bananas from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve hot.
