Pisang Goreng (Banana Fritters)

Ingredients

  • 4 medium Ripe Bananas
  • 1 cup Rice Flour
  • 1/2 cup Tapioca Flour
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 3/4 cup Water
  • 2 cups Cooking Oil

Instructions

  1. 1Peel the 4 medium ripe bananas and slice them into halves or thirds. Set aside.
  2. 2In a medium bowl, whisk together the 1 cup of rice flour, 1/2 cup of tapioca flour, 2 tablespoons of sugar, and 1/4 teaspoon of salt. Gradually whisk in the 3/4 cup of water until you have a smooth batter with no lumps.
  3. 3Pour the 2 cups of cooking oil into a large, heavy-bottomed pot or wok. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a tiny bit of batter into it; it should sizzle immediately.
  4. 4Carefully dip each banana slice into the batter, ensuring it is fully coated. Let any excess batter drip back into the bowl.
  5. 5Gently place the battered banana slices into the hot oil, being careful not to overcrowd the pot. Fry for 3-5 minutes, turning occasionally, until the fritters are golden brown and crispy on all sides.
  6. 6Using a slotted spoon or spider strainer, remove the fried banana fritters from the oil. Place them on a plate lined with paper towels to drain any excess oil for about 1 minute before serving.
