Ingredients

  • 2 cups Cooked rice (cooled)
  • 8 oz Shrimp (peeled and deveined)
  • 1 each Pineapple (halved and scooped out)
  • 1 cup Pineapple chunks (from scooped pineapple)
  • 0.5 cup Carrot (diced)
  • 0.5 cup Peas (frozen)
  • 0.5 cup Red bell pepper (diced)
  • 2 tbsp Green onion (chopped)
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 tbsp Cashews (optional)

Instructions

  1. 1Cut the pineapple in half and scoop out the flesh, reserving the shell. Cut the scooped pineapple into chunks.
  2. 2Heat sesame oil in a large skillet or wok over medium-high heat.
  3. 3Add shrimp and cook until pink and cooked through, about 3-4 minutes.
  4. 4Add carrot, peas, and red bell pepper and stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
  5. 5Add the cooked rice, pineapple chunks, soy sauce, and green onion. Stir-fry for 2-3 minutes, or until everything is well combined and heated through.
  6. 6Spoon the fried rice mixture into the reserved pineapple shells.
  7. 7Garnish with cashews (optional) and serve immediately.
