Pimientos de Padrón (Seared Padron Peppers)

A simple yet flavorful Spanish tapa, these small green peppers are blistered in olive oil and sprinkled with sea salt. Most are mild, but occasionally you'll find a spicy one!

Ingredients

  • 1 lb Padrón Peppers
  • 2 tbsp Olive Oil
  • 1/2 tsp Sea Salt

Instructions

  1. 1Place a 12-inch skillet over medium-high heat. Add the 2 tablespoons of olive oil to the skillet and heat until it shimmers, which should take about 1 minute.
  2. 2Carefully add the 1 lb of Padrón Peppers to the hot skillet in a single layer. Cook for 5 to 7 minutes, tossing the peppers occasionally with tongs, until they are blistered and slightly charred in spots. You will see some peppers start to soften and their skins wrinkle.
  3. 3Remove the skillet from the heat. Transfer the blistered Padrón Peppers to a serving plate.
  4. 4Sprinkle the 1/2 teaspoon of sea salt evenly over the peppers on the serving plate.
  5. 5Serve the Pimientos de Padrón immediately while they are still warm.
