Ingredients

  • 1 medium Red Cabbage
  • 2 medium Apples
  • 0.5 cup Red Wine Vinegar
  • 0.25 cup Coconut Sugar
  • 1 tbsp Juniper Berries
  • 0.5 tsp Allspice Berries
  • 1 leaf Bay Leaf
  • 0.5 cup Water
  • 0.5 tsp Salt

Instructions

  1. 1Thinly slice the red cabbage and apples.
  2. 2In a large saucepan, combine red wine vinegar, coconut sugar, juniper berries, allspice berries, bay leaf, water, and salt.
  3. 3Bring to a boil, then reduce heat and simmer for 5 minutes.
  4. 4Add the red cabbage and apples to the saucepan.
  5. 5Stir to coat, then cover and simmer for 25 minutes, or until the cabbage is tender.
  6. 6Remove from heat and let cool.
