Ingredients

  • 2 cups Rolled oats
  • 4 cups Water
  • 1 cup, grated Carrots
  • 1/2 cup Raisins
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Cardamom
  • 1 teaspoon Rose water
  • 2 tablespoons Maple syrup
  • 1/4 teaspoon Salt

Instructions

  1. 1In a large heavy-bottomed pot, combine the 2 cups of rolled oats, 4 cups of water, 1 cup of grated carrots, 1/2 cup of raisins, 1/2 teaspoon of cinnamon, 1/4 teaspoon of cardamom, and 1/4 teaspoon of salt.
  2. 2Place the pot over high heat and bring the mixture to a rolling boil, approximately 5-7 minutes. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 15-20 minutes. Stir occasionally to prevent sticking. The oatmeal is ready when it has a creamy consistency and the 1 cup of grated carrots are tender when poked with a fork.
  3. 3Remove the pot from the heat. Stir in the 1 teaspoon of rose water and the 2 tablespoons of maple syrup until fully combined.
