Persian Love Cake Bites

Miniature versions of the fragrant Persian Love Cake, infused with rosewater and cardamom. These moist and delicate bites are a perfect sweet peanut-free snack. Uses applesauce.

Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Cardamom
  • 2 Eggs
  • 1/2 cup Milk
  • 1/2 cup Applesauce
  • 2 tablespoons Rosewater
  • 1/4 cup Butter
  • 2 tablespoons Chopped Pistachios

Instructions

  1. 1Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin.
  2. 2In a medium bowl, whisk together the 1 1/2 cups of All-Purpose Flour, 1 cup of Sugar, 1 teaspoon of Baking Powder, and 1/2 teaspoon of Cardamom until well combined.
  3. 3In a separate medium bowl, whisk together the 2 Eggs, 1/2 cup of Milk, 1/2 cup of Applesauce, 2 tablespoons of Rosewater, and the 1/4 cup of Butter until smooth.
  4. 4Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined, being careful not to overmix.
  5. 5Spoon the batter evenly into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. 6Bake for 20 to 25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a cake bite comes out clean.
  7. 7Allow the cake bites to cool in the mini muffin tin for 5 minutes before carefully transferring them to a wire rack to cool completely. Garnish with the 2 tablespoons of Chopped Pistachios before serving.
