  • 1.5 cups Chickpeas (canned, drained and rinsed)
  • 2 tablespoons Tomato paste
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Cumin powder
  • 1 cup Vegetable broth
  • 1 tablespoon Lemon juice
  • 0.25 cup Fresh cilantro (chopped)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add chopped onion and sauté until softened, about 5 minutes.
  3. 3Add minced garlic, turmeric powder, and cumin powder. Cook for another minute until fragrant.
  4. 4Stir in tomato paste and cook for 2 minutes.
  5. 5Add drained and rinsed chickpeas and vegetable broth to the skillet. Bring to a simmer.
  6. 6Reduce heat to low, cover, and cook for 15 minutes, allowing the flavors to meld.
