Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/2 cup Parsley
  • 1/4 cup Cilantro
  • 1 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1/2 teaspoon Baking Soda
  • 1 tablespoon Flaxseed Meal
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • For frying as needed Vegetable Oil

Instructions

  1. 1Drain and rinse soaked chickpeas.
  2. 2In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, flaxseed meal mixture, salt, and pepper.
  3. 3Process until finely ground but not completely smooth. Some texture is desirable.
  4. 4Form mixture into small patties or balls.
  5. 5Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
  6. 6Fry falafel in batches until golden brown and crispy, about 3-5 minutes per side.
  7. 7Remove from oil and drain on paper towels.
  8. 8Serve warm with tahini sauce, gluten-free bread, and vegetables.
