Peixinhos da Horta (Green Bean Tempura)

Portuguese 'little fishes from the garden,' or battered and fried green beans. Made gluten-free with rice flour.

Ingredients

  • 1 lb Green Beans (trimmed)
  • 1 cup Rice Flour
  • 0.75 cup Sparkling Water (cold)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 cups Olive Oil (for frying)

Instructions

  1. 1Pour the 2 cups of olive oil into a large heavy-bottomed pot. Heat the oil over medium-high heat until it reaches 350°F (175°C). This should take about 5-10 minutes.
  2. 2While the oil is heating, combine the 1 cup of rice flour, 0.75 cup of cold sparkling water, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper in a medium bowl. Whisk these ingredients together until you have a smooth, lump-free batter.
  3. 3Take a few of the trimmed green beans and dip them into the batter. Make sure they are fully coated on all sides. You can hold them by the stem end if that is easier.
  4. 4Carefully place the battered green beans into the hot 2 cups of olive oil. Do not overcrowd the pot; fry in batches if necessary. Fry for about 2 to 3 minutes, or until the batter is golden brown and crispy.
  5. 5Using a slotted spoon, remove the fried green beans from the hot oil. Place them on a plate lined with paper towels to allow any excess oil to drain away.
  6. 6Repeat steps 3, 4, and 5 with the remaining green beans and batter until all are cooked.
  7. 7Serve the Peixinhos da Horta immediately while they are still hot and crispy.
