Peixinhos da Horta (Green Bean Tempura)

Ingredients

  • 1 pound Green Beans
  • 1 cup All-Purpose Flour
  • 3/4 cup Sparkling Water
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 cups Sunflower Oil

Instructions

  1. 1Wash the 1 pound of green beans and trim off the ends.
  2. 2In a medium bowl, whisk together the 1 cup of all-purpose flour, the 3/4 cup of sparkling water, the 1/2 teaspoon of salt, and the 1/4 teaspoon of black pepper until you have a smooth batter with no lumps.
  3. 3Pour the 2 cups of sunflower oil into a large, heavy-bottomed pot or deep fryer and heat it over medium-high heat until it reaches 350°F (175°C).
  4. 4Dip each trimmed green bean into the batter, making sure it is completely covered.
  5. 5Carefully place the battered green beans into the hot sunflower oil, frying them in batches so they are not crowded. Cook for 3 to 5 minutes, or until they are golden brown and crispy.
  6. 6Use a slotted spoon to remove the fried green beans from the oil and place them on a plate lined with paper towels to absorb any extra oil.
  7. 7Serve the Peixinhos da Horta hot.
