Peixinhos da Horta (Green Bean Fritters) - Gluten-Free

Ingredients

  • 1 lb Green Beans
  • 1 cup Rice Flour
  • 1/2 cup Sparkling Water
  • for frying as needed Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1Wash the 1 lb of Green Beans and trim off the ends.
  2. 2In a medium bowl, whisk together the 1 cup of Rice Flour, the 1/2 cup of Sparkling Water, the 1/2 tsp of Salt, and the 1/4 tsp of Black Pepper until you have a smooth batter.
  3. 3Pour enough Olive Oil into a large skillet to come about 1/2 inch up the sides. Heat the Olive Oil over medium-high heat until it reaches 350°F (175°C).
  4. 4Dip a few of the trimmed green beans into the batter, making sure they are coated evenly.
  5. 5Carefully place the battered green beans into the hot Olive Oil. Fry for 2 to 3 minutes per side, until they are golden brown and crispy. The oil should sizzle gently around them.
  6. 6Use tongs to remove the fried green beans from the hot Olive Oil. Place them on a plate lined with paper towels to drain any excess oil.
  7. 7Repeat steps 4 through 6 with the remaining green beans and batter.
  8. 8Serve the Peixinhos da Horta hot.
