Ingredients

  • 1 lb Green Beans (trimmed)
  • 1 cup All-Purpose Flour
  • 0.25 cup Cornstarch
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 1 cup Sparkling Water
  • 2 cups Vegetable Oil (for frying)

Instructions

  1. 1In a large bowl, combine the 1 cup of all-purpose flour, 0.25 cup of cornstarch, 1 tsp of baking powder, and 0.5 tsp of salt. Whisk these dry ingredients together until they are well mixed.
  2. 2Gradually add the 1 cup of sparkling water to the dry ingredients. Whisk continuously until you have a smooth batter with no lumps.
  3. 3Pour the 2 cups of vegetable oil into a large skillet or deep fryer. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. 4Take one trimmed green bean at a time and dip it into the batter. Make sure the entire green bean is covered in the batter.
  5. 5Carefully place the battered green beans into the hot vegetable oil. Do this in small batches so the beans do not stick together and the oil temperature stays consistent.
  6. 6Fry the green beans for 2 to 3 minutes on each side. They are ready when they are golden brown and look crispy.
  7. 7Using a slotted spoon or tongs, remove the crispy green beans from the hot oil. Place them on a plate lined with paper towels to absorb any extra oil.
  8. 8Serve the Peixinhos da Horta immediately while they are hot and crispy.
