Ingredients

  • 1 lb Split Peas
  • 8 cups Vegetable Broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 3 cloves Garlic
  • 1 tsp Smoked Paprika
  • 1 leaf Bay Leaf
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 0.5 lb Firm Tofu
  • 1 tbsp Soy Sauce
  • 2 tbsp Olive Oil

Instructions

  1. 1Rinse Split Peas: Rinse split peas thoroughly.
  2. 2Sauté Vegetables: Sauté diced onion, carrots, and celery until softened. Add garlic and smoked paprika and cook for 1 minute.
  3. 3Simmer Soup: Add split peas, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until peas are tender.
  4. 4Prepare Tofu Croutons: Dice tofu into small cubes. Toss with soy sauce and olive oil.
  5. 5Bake Croutons: Bake tofu croutons in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown and crispy.
  6. 6Serve Soup: Remove bay leaf from soup. Blend soup if desired. Serve hot, topped with smoked tofu croutons.
