Ingredients

  • 2 lb Potatoes (russet or Yukon gold)
  • 1/2 cup Olive Oil
  • 2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/4 tsp Cayenne Pepper
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 14.5 oz can Canned Diced Tomatoes
  • 2 tbsp Tomato Paste
  • 1/2 tsp Sugar
  • 1/2 cup Mayonnaise (egg-based)
  • 2 cloves Garlic
  • 1 tbsp Lemon Juice

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Peel and cut the potatoes into 1-inch cubes.
  3. 3Toss the potatoes with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
  4. 4Spread the potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until golden brown and crispy.
  5. 5While the potatoes are roasting, prepare the brava sauce. In a saucepan, combine the diced tomatoes, tomato paste, sugar, salt, and a pinch of cayenne pepper.
  6. 6Simmer the sauce over medium heat for 15 minutes, or until slightly thickened.
  7. 7For the aioli, mince the garlic. In a bowl, whisk together the mayonnaise, minced garlic, and lemon juice.
  8. 8Serve the roasted potatoes with the brava sauce and aioli drizzled over the top.
