Ingredients

  • 2 lbs Potatoes
  • 0.5 cup Olive oil
  • 2 tbsp Olive oil
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Smoked paprika
  • 0.25 tsp Cayenne pepper
  • 2 tbsp Tomato paste
  • 0.5 cup Gluten-free vegetable broth
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Peel the 2 lbs of potatoes and cut them into 1-inch (2.5 cm) cubes. In a large (e.g., 12-inch / 30 cm) skillet or a large heavy-bottomed pot, pour the 0.5 cup of olive oil. Heat the oil over medium-high heat (approximately 350°F / 175°C) until it shimmers and a small piece of potato sizzles immediately when added.
  2. 2Carefully add the cubed potatoes to the hot oil. Fry for 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy on all sides and tender when pierced with a fork. Using a slotted spoon, remove the fried potatoes from the skillet and place them on a plate lined with paper towels to drain excess oil.
  3. 3While the potatoes are frying or draining, finely dice the 0.5 medium onion and mince the 2 cloves of garlic. In a separate medium saucepan (e.g., 2-quart / 2-liter), heat the 2 tablespoons of olive oil over medium heat (approximately 300°F / 150°C).
  4. 4Add the diced 0.5 medium onion to the saucepan. Sauté for 3-5 minutes, stirring occasionally, until the onion softens and becomes translucent. Add the minced 2 cloves of garlic and continue to sauté for 1 minute until fragrant, being careful not to let the garlic brown.
  5. 5Stir in the 1 tablespoon of smoked paprika, 0.25 teaspoon of cayenne pepper, and 2 tablespoons of tomato paste. Cook for 1 minute, stirring constantly, to toast the spices and deepen the flavor of the tomato paste.
  6. 6Pour in the 0.5 cup of gluten-free vegetable broth. Stir well to combine all ingredients and bring the sauce to a gentle simmer over medium heat. Reduce the heat to low and let it simmer for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and coats the back of a spoon.
  7. 7Remove the saucepan from the heat. Stir in the 0.5 teaspoon of salt and 0.25 teaspoon of black pepper until well combined.
  8. 8Arrange the crispy fried potatoes on a serving platter. Spoon the warm brava sauce generously over the potatoes and serve immediately.
