Patacones with Guacamole (Gluten-Free)

Ingredients

  • 2 large Green plantains
  • 0 as needed Vegetable oil, for frying
  • 2 ripe Avocados
  • 2 tablespoons Lime juice
  • 1/4 cup Red onion, finely chopped
  • 2 tablespoons Cilantro, chopped
  • 1/2 small Jalapeño, seeded and minced (optional)
  • 1/2 teaspoon Salt

Instructions

  1. 1Peel the green plantains and cut them into 1-inch thick slices.
  2. 2Heat the vegetable oil in a deep fryer or large pot to 325°F (160°C).
  3. 3Fry the plantain slices for about 3-4 minutes per side, or until lightly golden. Remove and drain on paper towels.
  4. 4Using a plantain press or a flat-bottomed object, flatten each plantain slice into a disc about 1/4 inch thick.
  5. 5Increase the oil temperature to 375°F (190°C).
  6. 6Fry the flattened plantains again for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt.
  7. 7To make the guacamole: In a bowl, mash the avocados with lime juice. Stir in the red onion, cilantro, and jalapeño (if using). Season with salt.
  8. 8Serve the patacones with guacamole.
