Patacones con Hogao Vegano (Fried Plantains with Vegan Hogao)

Ingredients

  • 2 large Green Plantains
  • 2 cups Vegetable Oil
  • 2 medium Tomatoes
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Cilantro
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel the green plantains and cut them into 1-inch thick slices.
  2. 2Heat vegetable oil in a large pot or deep fryer to 325°F (160°C).
  3. 3Fry the plantain slices for 3-4 minutes per side, until lightly golden.
  4. 4Remove the plantains and drain on paper towels.
  5. 5Using a pataconera (plantain press) or a flat surface, flatten each plantain slice.
  6. 6Heat the oil to 375°F (190°C).
  7. 7Fry the flattened plantains again for 2-3 minutes per side, until golden brown and crispy.
  8. 8While the patacones are frying, prepare the hogao: Heat olive oil in a skillet over medium heat. Add onion and garlic, and cook until softened.
  9. 9Add diced tomatoes, cilantro, cumin, salt, and pepper. Cook for 10-15 minutes, or until the sauce has thickened.
  10. 10Serve the patacones topped with the hogao.
