Ingredients

  • 2 cups All-purpose flour
  • 1/2 teaspoon Salt
  • 1 cup Cold unsalted butter
  • 1/2 cup Ice water
  • 1/2 cup Dulce de membrillo (quince paste)
  • 2 cups Vegetable oil
  • 2 tablespoons Powdered sugar

Instructions

  1. 1In a large bowl, whisk together flour and salt.
  2. 2Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. 3Gradually add ice water, mixing until the dough comes together. Be careful not to overmix.
  4. 4Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. 5On a lightly floured surface, roll out the dough into a thin rectangle.
  6. 6Cut the dough into squares (about 3 inches each).
  7. 7Place a small cube of dulce de membrillo in the center of each square.
  8. 8Fold the corners of each square towards the center, pinching to seal and create a star shape.
  9. 9Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  10. 10Fry the pastelitos in batches until golden brown and crispy. Remove and drain on paper towels.
  11. 11Dust with powdered sugar before serving.
