Ingredients

  • 1/2 cup Rolled Oats
  • 1 cup Milk
  • 1/2 cup Water
  • 1 tbsp Sugar
  • 1/4 tsp Cinnamon
  • 1/4 tsp Lemon Zest
  • 1 tsp Brown Sugar

Instructions

  1. 1In a medium saucepan, combine the 1/2 cup Rolled Oats, 1 cup Milk, 1/2 cup Water, 1 tablespoon Sugar, 1/4 teaspoon Cinnamon, and 1/4 teaspoon Lemon Zest. Stir everything together until well combined.
  2. 2Place the saucepan over medium heat. Bring the mixture to a gentle boil, watching for small bubbles to form around the edges. Once it begins to boil, immediately reduce the heat to low and let it simmer for 5 to 7 minutes. Stir occasionally to prevent sticking. The oatmeal is ready when it has thickened and looks creamy.
  3. 3Carefully pour the cooked oatmeal into a serving bowl.
  4. 4Evenly sprinkle the 1 teaspoon Brown Sugar over the entire surface of the oatmeal in the bowl.
  5. 5To create a caramelized crust, use a kitchen torch to melt and brown the brown sugar until it forms a golden, crispy layer. If you do not have a kitchen torch, you can place the bowl under a preheated broiler set to high (around 500°F or 260°C) for 1 to 2 minutes. Watch it very closely to ensure the sugar caramelizes without burning.
  6. 6Serve your Pastel de Nata Inspired Oatmeal immediately while the caramelized topping is warm and crisp.
