Ingredients

  • 2 lb Potatoes, Yukon Gold
  • 1 lb Ground Beef
  • 1/2 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Aji Amarillo Paste
  • 1/4 cup Raisins
  • 1/4 cup Olives, chopped
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Paprika
  • 1/2 cup All-Purpose Flour
  • 1/4 cup Cornstarch
  • 1/2 cup Water
  • 2 cups Vegetable Oil

Instructions

  1. 1Boil the potatoes until tender. Peel and mash them until smooth.
  2. 2In a pan, sauté the onion and garlic until softened. Add the ground beef and cook until browned. Drain any excess fat.
  3. 3Stir in the aji amarillo paste, raisins, olives, cumin, and paprika. Cook for a few more minutes.
  4. 4Let the potato mash cool slightly. Take a portion of the mashed potatoes and flatten it in your hand. Place a spoonful of the beef mixture in the center and form it into a ball.
  5. 5Mix cornstarch with water to form a slurry.
  6. 6Dip each potato ball into the cornstarch slurry, ensuring it's fully coated.
  7. 7Heat vegetable oil in a deep fryer or large pan to 350°F (175°C).
  8. 8Fry the papa rellenas until golden brown and crispy. Drain on paper towels.
  9. 9Serve hot.
