Pap and Sheba (Tomato Relish)

Ingredients

  • 2 cups Mealie Meal (Maize Flour)
  • 4 cups Water
  • 1/2 tsp Salt
  • 2 tbsp Vegetable Oil
  • 1 medium Onion
  • 2 cups Canned Diced Tomatoes
  • 2 cloves Garlic
  • 1/2 cup Bell Pepper
  • 1/4 tsp Chili Flakes
  • 1 tsp Sugar
  • 1 tsp Dried Herbs (mixed)

Instructions

  1. 1In a saucepan, bring water to a boil. Add salt.
  2. 2Gradually whisk in the mealie meal, stirring constantly to avoid lumps.
  3. 3Reduce heat to low, cover, and simmer for 20-30 minutes, stirring occasionally, until the pap is thick and cooked through.
  4. 4While the pap is cooking, prepare the sheba. Heat vegetable oil in a skillet over medium heat.
  5. 5Add chopped onion and cook until softened, about 5 minutes.
  6. 6Add minced garlic and diced bell pepper. Cook for another 2 minutes.
  7. 7Stir in canned diced tomatoes, chili flakes (if using), sugar, and dried herbs.
  8. 8Bring to a simmer, reduce heat, and cook for 15-20 minutes, or until the sauce has thickened slightly.
  9. 9Serve the pap hot with a generous spoonful of sheba on top.
