Prepare the vegetables: peel and cut the 1 large Carrots into thin matchsticks (julienne), thinly slice the 1/4 head Cabbage, and slice the 2 stalks Celery thinly. Finely chop the 1 small Onion and mince the 3 cloves Garlic.
- 3Heat 2 tablespoons of Cooking oil in a large wok or 12-inch skillet over medium heat (350°F / 175°C). Add the chopped 1 small Onion and minced 3 cloves Garlic. Cook for 2-3 minutes, stirring often, until the onion is softened and the garlic is fragrant, but not browned.
- 4Add the cubed 1 block Extra-firm tofu to the wok. Cook for 5-7 minutes, stirring occasionally, until the tofu is lightly browned on most sides.

- 6Add the drained 8 oz Bihon noodles, 1/4 cup Soy sauce alternative, and 1 cup Vegetable broth to the wok. Stir everything together gently to combine. Cook for 5-7 minutes, stirring and tossing the noodles with the vegetables and sauce, until the noodles are fully cooked and have absorbed most of the liquid.
