A popular Filipino noodle dish made with thin rice noodles, vegetables, and meat (chicken or pork). This version uses coconut aminos instead of soy sauce.

Ingredients

  • 1 lb Bihon (thin rice noodles)
  • 1 lb Chicken breast
  • 1/2 lb Shrimp (optional)
  • 1 medium Carrots
  • 1/2 medium Cabbage
  • 2 stalks Celery
  • 1 medium Onion
  • 4 cloves Garlic
  • 4 cups Chicken broth
  • 3 tbsp Coconut aminos
  • 1 tbsp Fish sauce
  • 2 tbsp Vegetable oil
  • to taste Salt
  • to taste Pepper

Instructions

  1. 1Soak the rice noodles in warm water until softened.
  2. 2Cut the chicken breast into thin strips.
  3. 3Heat vegetable oil in a large wok or pan over medium heat.
  4. 4Sauté the garlic and onion until fragrant.
  5. 5Add the chicken and shrimp (if using) and cook until browned.
  6. 6Add the carrots, cabbage, and celery. Cook until slightly softened.
  7. 7Pour in the chicken broth and coconut aminos. Bring to a boil.
  8. 8Add the soaked bihon noodles and a soy-free fish sauce.
  9. 9Stir-fry the rice noodles until they are cooked through and the liquid is absorbed.
  10. 10Season with salt and pepper to taste.
  11. 11Serve hot.
