Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 1/4 cups Dairy-Free Milk (Oat or Soy)
  • 1 large Egg
  • 2 tablespoons Melted Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup Dates, pitted
  • 1/2 cup Water
  • 1 teaspoon Lemon Juice

Instructions

  1. 1In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. 2In a separate bowl, whisk together dairy-free milk, egg, melted coconut oil, and vanilla extract.
  3. 3Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  4. 4Heat a lightly oiled griddle or frying pan over medium heat.
  5. 5Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. 6Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. 7To make the Date Manjar: Combine pitted dates and water in a saucepan. Bring to a simmer and cook until the dates are soft and the mixture has thickened, about 10-15 minutes.
  8. 8Blend the date mixture with lemon juice until smooth and creamy. Add more water if needed to reach desired consistency.
  9. 9Serve pancakes warm with a generous dollop of date manjar.
