Pan con Tomate (Tomato Bread)

A simple and classic Spanish tapa: toasted bread rubbed with garlic and ripe tomatoes, drizzled with olive oil, and sprinkled with salt. Naturally dairy-free and egg-free.

Ingredients

  • 4 slices Crusty bread
  • 2 medium Ripe tomatoes
  • 1 clove Garlic cloves
  • 2 tbsp Olive oil
  • 1/4 tsp Salt

Instructions

  1. 1Place the 4 slices of crusty bread into a toaster or under a broiler. Toast for 2-4 minutes, or until both sides are golden brown. If using a broiler, watch carefully to prevent burning.
  2. 2While the bread is toasting, cut the 2 medium ripe tomatoes in half. Once the bread is toasted, take one half of a tomato and rub the cut side firmly across the surface of each slice of toast. You want to transfer the tomato juice and pulp onto the bread.
  3. 3Take the 1 clove of garlic and rub the cut side firmly across the surface of each slice of toast, over the tomato. This will add a garlic flavor to the bread.
  4. 4Drizzle the 2 tablespoons of olive oil evenly over all 4 slices of toast.
  5. 5Sprinkle the 1/4 teaspoon of salt evenly over the olive oil on the toast.
  6. 6Serve the pan con tomate immediately.
