Ingredients

  • 1.5 lbs Chicken Thighs
  • 0.5 cup Almond Butter
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1 can Diced Tomatoes
  • 2 cups Chicken Broth
  • 1 medium Sweet Potato
  • 1 tbsp Olive Oil
  • 0.5 tsp Red Pepper Flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add diced onion and cook until softened, about 5 minutes.
  3. 3Add minced garlic and grated ginger, cook for 1 minute more.
  4. 4Add chicken thighs and brown on all sides.
  5. 5Stir in diced tomatoes, chicken broth, diced sweet potato, and almond butter.
  6. 6Bring to a simmer, cover, and cook for 25 minutes, or until chicken is cooked through and sweet potatoes are tender.
  7. 7Season with salt, pepper, and red pepper flakes to taste. Serve hot.
