Paleo Thiakry (Couscous-Free)

Traditional Thiakry is a couscous-based dessert. This paleo version uses shredded coconut and tapioca to mimic the texture with paleo ingredients, then flavors it with yogurt, vanilla, and nutmeg.

Ingredients

  • 2 cups Shredded Coconut (unsweetened)
  • 1 cup Coconut Yogurt
  • 1 tbsp Tapioca Flour
  • 1 tsp Vanilla Extract
  • 1/4 tsp Nutmeg
  • 2 tbsp Raw Honey or Maple Syrup

Instructions

  1. 1In a medium bowl, combine the 2 cups of shredded coconut with the 1 tablespoon of tapioca flour. Stir them together until the shredded coconut is evenly coated with the tapioca flour.
  2. 2In a separate medium bowl, whisk together the 1 cup of coconut yogurt, 1 teaspoon of vanilla extract, and 1/4 teaspoon of nutmeg. Add the 2 tablespoons of raw honey or maple syrup and whisk again until everything is smoothly combined.
  3. 3Pour the yogurt mixture into the bowl with the coconut and tapioca flour mixture. Stir everything together thoroughly until all the dry ingredients are fully incorporated into the wet ingredients.
  4. 4Cover the bowl and let the mixture sit at room temperature for at least 15 minutes. This resting time allows the tapioca flour to absorb moisture and slightly thicken the mixture, while also letting the flavors meld together.
  5. 5After resting, stir the Thiakry mixture one more time. Serve chilled.
