Paleo Tatale (Plantain Pancakes)

Tatale are ripe plantain pancakes, a popular Ghanaian snack or side dish. This paleo version uses coconut flour instead of wheat flour to create a delicious and compliant treat.

Ingredients

  • 3 medium Ripe plantains
  • 0.5 cup Coconut flour
  • 2 tbsp Coconut oil
  • 0.5 tsp Ginger
  • 0.25 tsp Cinnamon
  • pinch Salt

Instructions

  1. 1Peel the plantains and mash them well in a bowl.
  2. 2Add coconut flour, ginger, cinnamon, and salt to the mashed plantains. Mix thoroughly until you have a smooth batter.
  3. 3Heat coconut oil in a skillet over medium heat.
  4. 4Drop spoonfuls of the plantain batter onto the hot skillet, forming small pancakes.
  5. 5Fry for about 3-4 minutes per side, or until golden brown and cooked through.
  6. 6Remove the tatale from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. 7Serve warm as a snack or side dish.
