Paleo Taiwanese Beef Noodle Soup

Ingredients

  • 1.5 lb Beef Chuck
  • 8 oz Sweet Potato Noodles
  • 6 cups Bone Broth
  • 1/4 cup Coconut Aminos
  • 2 tbsp Rice Vinegar
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 whole Star Anise
  • 1 small Cinnamon Stick
  • 2 stalks Green Onions
  • 1 head Bok Choy

Instructions

  1. 1Cut the beef chuck into 1-inch cubes.
  2. 2In a large pot or Dutch oven, brown the beef on all sides.
  3. 3Add garlic, ginger, star anise, and cinnamon stick to the pot and saute for 1 minute.
  4. 4Pour in bone broth, coconut aminos, and rice vinegar. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until beef is tender.
  5. 5Add sweet potato noodles and bok choy to the soup and cook for 5 minutes, or until noodles are tender.
  6. 6Garnish with chopped green onions and serve hot.
