Ingredients

  • 4 large Bell peppers
  • 1 lb Ground sausage
  • 1 bunch Swiss chard
  • 2 cups Cauliflower rice
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Tomato paste
  • 1 tbsp Italian seasoning
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cut the bell peppers in half lengthwise and remove the seeds. Drizzle with olive oil and season with salt and pepper.
  3. 3In a large skillet, brown the ground sausage over medium heat. Drain any excess fat.
  4. 4Add the chopped onion and minced garlic to the skillet and sauté until softened.
  5. 5Stir in the chopped swiss chard, cauliflower rice, tomato paste, and Italian seasoning. Cook until the swiss chard is wilted.
  6. 6Season with salt and pepper to taste.
  7. 7Spoon the sausage mixture into the bell pepper halves.
  8. 8Place the stuffed peppers in a baking dish and bake in the preheated oven for 35-40 minutes, or until the peppers are tender.
  9. 9Serve hot.
