Ingredients

  • 4 large Bell Peppers
  • 1.5 lbs Ground Turkey
  • 1 medium Onion
  • 4 cloves Garlic
  • 2 cups Cauliflower Rice
  • 2 tbsp Tomato Paste
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 0.25 cup Fresh Parsley
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. 1Preheat oven to 375°F (190°C). Cut bell peppers in half lengthwise and remove seeds. Place in a baking dish.
  2. 2Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. 3Add ground turkey to the skillet and cook until browned, breaking it up with a spoon.
  4. 4Stir in cauliflower rice, tomato paste, oregano, basil, parsley, salt, and pepper. Cook for another 5 minutes.
  5. 5Spoon the ground turkey mixture into the bell pepper halves.
  6. 6Bake for 35-40 minutes, or until bell peppers are tender and filling is heated through.
