Paleo Shepherd's Pie with Sweet Potato Topping

Ingredients

  • 2 lb Ground lamb
  • 3 large Sweet potatoes, peeled and cubed
  • 1 large Onion, chopped
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Coconut aminos
  • 1 tablespoon Fresh rosemary, chopped
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions

  1. 1Preheat your oven to 400°F (200°C). In a large pot, bring enough water to cover the 3 large peeled and cubed sweet potatoes to a boil over high heat. Add the 3 large sweet potatoes and boil for 15-20 minutes, or until they are very tender when pierced with a fork; drain them well and return them to the pot. Mash the sweet potatoes thoroughly with a potato masher until smooth, then season with salt and pepper to taste.
  2. 2In a large skillet (at least 12-inch diameter), heat the 2 tablespoons of olive oil over medium heat. Add the 2 lb of ground lamb and cook, breaking it up with a spoon, for 8-10 minutes, until it is fully browned and no pink remains. Carefully drain and discard any excess grease from the skillet.
  3. 3Add the 1 large chopped onion, 2 medium diced carrots, and 2 diced stalks of celery to the skillet with the cooked lamb. Sauté for 5-7 minutes over medium heat, stirring occasionally, until the vegetables have softened. Add the 3 minced cloves of garlic and the 2 tablespoons of tomato paste, and cook for 1 minute more, stirring constantly, until fragrant.
  4. 4Pour in the 1 cup of beef broth, 1 tablespoon of coconut aminos, and 1 tablespoon of fresh chopped rosemary. Stir everything together well. Bring the mixture to a gentle simmer over medium heat and cook for 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  5. 5Transfer the hot lamb and vegetable mixture evenly into a 9x13 inch baking dish. Carefully spread the mashed sweet potatoes evenly over the top of the lamb mixture, ensuring it covers the entire surface. Bake in the preheated oven at 400°F (200°C) for 20-25 minutes, or until the sweet potato topping is lightly browned and the filling is bubbling around the edges.
  6. 6Remove the baking dish from the oven and let the Paleo Shepherd's Pie cool for 5-10 minutes before serving. This cooling time allows the filling to set, making it easier to serve.
