Ingredients

  • 6 large Large Eggs
  • 1 lb Ground Pork
  • 1/2 cup Almond Flour
  • 1/4 small Onion
  • 1 clove Garlic
  • 1/2 teaspoon Sage
  • 1/4 teaspoon Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Olive Oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Boil 4 eggs for 8 minutes to make hard-boiled eggs. Immediately transfer to an ice bath to stop cooking. Peel carefully.
  3. 3In a bowl, combine ground pork, finely chopped onion, minced garlic, sage, thyme, salt, and pepper. Mix well with your hands.
  4. 4Divide the sausage mixture into 4 equal portions.
  5. 5Take one portion of the sausage mixture and flatten it in your palm. Place a peeled hard-boiled egg in the center and carefully wrap the sausage meat around the egg, ensuring it's completely covered.
  6. 6Repeat with the remaining eggs and sausage mixture.
  7. 7Place almond flour in a shallow dish. Roll each sausage-covered egg in almond flour, ensuring it's evenly coated.
  8. 8Lightly grease a baking sheet with olive oil. Place the scotch eggs on the baking sheet.
  9. 9Bake in the preheated oven for 25-30 minutes, or until the sausage meat is cooked through and the almond flour is golden brown.
  10. 10Let cool slightly before serving.
