Paleo Scallion Pancake (Cong You Bing)

A Paleo adaptation of the popular Taiwanese Scallion Pancake. Uses a combination of Tapioca flour and Coconut Flour to mimic the texture of the original.

Ingredients

  • 1 cup Tapioca Flour
  • 1/4 cup Coconut Flour
  • 3/4 cup Hot Water
  • 2 tablespoons Cold Water
  • 1/4 cup Avocado Oil
  • 1 cup Scallions
  • 1 teaspoon Sea Salt
  • 2 tablespoons Coconut Aminos

Instructions

  1. 1Combine tapioca flour and coconut flour in a bowl.
  2. 2Gradually add hot water, mixing with a spoon until a shaggy dough forms. Add cold water and mix until dough comes together.
  3. 3Knead dough for 2-3 minutes until smooth. Cover and let rest for 15 minutes.
  4. 4Divide dough into 4 equal portions.
  5. 5On a lightly floured surface (use tapioca flour), roll out each portion into a thin circle.
  6. 6Brush with avocado oil and sprinkle with chopped scallions and sea salt.
  7. 7Roll up the circle tightly into a log, then coil the log into a spiral. Flatten the spiral into a pancake shape.
  8. 8Heat avocado oil in a skillet over medium heat. Cook pancakes for 3-4 minutes per side, or until golden brown and crispy.
  9. 9Serve hot with coconut aminos for dipping.
