Paleo Potato and Leek Soup (Creamy Version)

Ingredients

  • 1.5 lb Potatoes
  • 2 large Leeks
  • 4 cups Chicken Broth
  • 1 can Coconut Milk
  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 tsp Salt
  • 0.5 tsp White Pepper

Instructions

  1. 1Peel and chop potatoes into 1-inch pieces. Slice the leeks (white and light green parts only) and wash thoroughly.
  2. 2Heat olive oil in a large pot over medium heat. Add the sliced leeks and minced garlic. Sauté until softened, about 5 minutes.
  3. 3Add the chopped potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. 4Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a regular blender and blend in batches.
  5. 5Stir in the coconut milk and heat through. Season with salt and white pepper to taste.
