Paleo Pineapple Cake Bites

Ingredients

  • 1 1/2 cups Almond Flour
  • 1/2 cup Tapioca Flour
  • 1/2 cup Coconut Oil
  • 1/4 cup Maple Syrup
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups Pineapple
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Cinnamon

Instructions

  1. 1Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. 2In a bowl, combine almond flour, tapioca flour, melted coconut oil, maple syrup, egg, and vanilla extract. Mix well to form a dough.
  3. 3In a separate saucepan, combine diced pineapple, lemon juice, and cinnamon. Cook over medium heat for 15-20 minutes, or until pineapple is softened and thickened. Let cool.
  4. 4Take a small amount of dough and flatten it into a circle. Place a spoonful of pineapple filling in the center.
  5. 5Bring the edges of the dough together to enclose the filling, forming a small ball.
  6. 6Place the pineapple cake bites on the prepared baking sheet.
  7. 7Bake for 20-25 minutes, or until golden brown.
  8. 8Let cool completely before serving.
