Ingredients

  • 2 cups Cassava Flour
  • 0.5 cup Tapioca Starch
  • 1 large Egg
  • 2 tbsp Olive Oil
  • 0.5 tsp Salt
  • 0.75 cup Water
  • 1 lb Cremini Mushrooms
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tbsp Fresh Parsley

Instructions

  1. 1In a bowl, combine cassava flour, tapioca starch, egg, olive oil, salt, and water to form a dough.
  2. 2Sauté diced onion and minced garlic until softened. Add sliced mushrooms and cook until tender.
  3. 3Stir in chopped parsley and season with salt and pepper.
  4. 4Roll out the dough thinly and cut out circles using a cookie cutter or glass.
  5. 5Place a spoonful of mushroom filling onto each circle. Fold the dough over and crimp the edges to seal.
  6. 6Boil pierogi in salted water for 5-7 minutes, or until they float to the surface.
  7. 7Sauté the boiled pierogi with some olive oil for a crispy texture.
