A comforting and flavorful Paleo version of Vietnamese Chicken Noodle Soup, using zucchini noodles and a rich bone broth.

Ingredients

  • 1 whole Chicken carcass
  • 1 lb Chicken thighs
  • 1 medium Onion
  • 2 inch Ginger
  • 3 whole Star anise
  • 1 stick Cinnamon stick
  • 2 tbsp Coconut aminos
  • 1 tbsp Fish sauce (paleo)
  • 4 medium Zucchini
  • 1 cup Bean sprouts
  • 4 wedges Lime wedges
  • 1/4 cup Cilantro
  • 1/4 cup Thai basil

Instructions

  1. 1Peel and halve the 1 medium onion. Slice the 2 inch ginger into 1/2-inch thick pieces. Place the 1 whole chicken carcass, the prepared 1 medium onion, and the prepared 2 inch ginger on a large baking sheet.
  2. 2Roast the ingredients in an oven preheated to 400°F (200°C) for 30 minutes, until they are lightly browned and fragrant.
  3. 3Transfer the roasted 1 whole chicken carcass, 1 medium onion, and 2 inch ginger to a large heavy-bottomed pot (at least 6-quart capacity). Add the 1 lb chicken thighs, 3 whole star anise, and 1 stick cinnamon stick. Pour enough cold water into the pot to cover all ingredients by about 2 inches. Bring the water to a rolling boil over high heat, then immediately reduce the heat to low, cover the pot, and simmer gently for 60 to 90 minutes, or until the chicken thighs are tender and cooked through (internal temperature 165°F / 74°C).
  4. 4Carefully remove the 1 lb chicken thighs from the pot and set them aside to cool slightly for 5-10 minutes. Once cool enough to handle, use two forks to shred the chicken thighs into bite-sized pieces. Carefully pour the broth through a fine-mesh sieve into a clean large pot or heatproof bowl, discarding the chicken carcass, onion, ginger, star anise, and cinnamon stick.
  5. 5Return the strained broth to the pot over medium-low heat. Stir in the 2 tbsp coconut aminos and 1 tbsp fish sauce (paleo). While the broth is reheating, use a spiralizer to transform the 4 medium zucchini into long, thin zucchini noodles.
  6. 6Divide the spiralized 4 medium zucchini noodles and the shredded 1 lb chicken thighs evenly among four serving bowls. Ladle the hot broth over the zucchini noodles and chicken. Garnish each bowl with an equal portion of the 1 cup bean sprouts, 1 of the 4 lime wedges, an equal portion of the 1/4 cup cilantro, and an equal portion of the 1/4 cup Thai basil.
