Paleo Pepper Soup with Goat Meat and Plantains

Ingredients

  • 1.5 lbs Goat meat (cubed)
  • 2 large Green plantains (peeled and chopped)
  • 1 large Onion (chopped)
  • 2 small Scotch bonnet pepper (minced, adjust to taste)
  • 1 tbsp Ginger (grated)
  • 2 cloves Garlic (minced)
  • 2 tbsp Pepper soup spice blend
  • 6 cups Chicken broth
  • 1 tsp Uziza seeds (ground)
  • 1 tsp Salt
  • 0.25 cup Scent leaves (chopped)

Instructions

  1. 1In a large pot, combine the cubed goat meat, chopped onion, minced scotch bonnet pepper, grated ginger, minced garlic, and pepper soup spice blend.
  2. 2Add the chicken broth and bring to a boil. Reduce heat and simmer for 60 minutes, or until the goat meat is tender.
  3. 3Add the chopped green plantains and ground uziza seeds. Continue to simmer for another 10 minutes, or until the plantains are cooked through.
  4. 4Season with salt to taste.
  5. 5Garnish with chopped scent leaves before serving.
