Ingredients

  • 1.5 lbs Chicken Thighs
  • 4 medium Zucchini
  • 0.5 cup Orange Juice
  • 1 tbsp Orange Zest
  • 0.25 cup Coconut Aminos
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Honey
  • 2 tbsp Arrowroot Starch
  • 2 tbsp Avocado Oil

Instructions

  1. 1Cut chicken thighs into bite-sized pieces and toss with 1 tbsp arrowroot starch.
  2. 2Spiralize or julienne zucchini into noodles.
  3. 3In a bowl, whisk together orange juice, orange zest, coconut aminos, apple cider vinegar, honey, and 1 tbsp arrowroot starch.
  4. 4Heat avocado oil in a wok or skillet over medium-high heat.
  5. 5Add chicken and cook until browned and cooked through.
  6. 6Pour the orange sauce over the chicken and cook until thickened.
  7. 7Add the zucchini noodles to the pan and toss to coat in sauce for 2 minutes. Make sure they don't become soggy.
  8. 8Serve immediately.
